Josh Niland redefines dining with a first-of-its-kind concept featuring ethically sourced seafood and fish dishes. Recently honoured with Three Hats by Australia Good Food Guide Awards 2024, his menu showcases a thoughtful balance of fish, seafood, and meat, much of it cooked over the charcoal Josper grill. Whilst the menu is fish-focused, land-based protein and vegetables are treated with equal reverence and respect.
